Pork fillet with honey and ginger

Ingredients (10)

500 g pork fillets — cubed
2 garlic — cloves, crushed
15 ml fresh ginger — finely shredded
30 ml sunflower oil
30 ml lemon juice
60 ml honey
45 ml soy sauce
300 g green beans — baby, trimmed
7 ml cornflour
45 ml sherry

Method:

Place pork cubes, garlic and ginger in a bowl and set aside for 5 minutes.

Heat oil in a wide, heavy-based or cast-iron frying pan over high heat and fry pork for 2 minutes on each side.

Remove and set aside.
Add lemon juice, honey, soy sauce and green beans to pan and cook for 3 minutes, or until beans are done to taste.

Mix cornflour to a paste with sherry and add to pan with pork. Heat until sauce is slightly thickened and glossy.

Serve with fragrant rice.
