Pineapple chicken burgers with mango salsa

Ingredients (6)

4 chicken breast fillets — butterflied
1 Tbs vegetable oil
salt and freshly ground black pepper — to taste
1 pineapple — small, peeled and sliced
4 bread
rocket

Method:

Start with the mango salsa so that it can chill while you make the burgers.

Heat your sandwich press. Oil the chicken lightly on both sides and season with salt and pepper.

Place the chicken in the sandwich press and “grill” for about 6-8 minutes, depending on how think you kept the chicken. While the chicken is grilling, assemble your burgers.

Place some rocket on the one half of the bun, top with a slice of pineapple and wait for the chicken. Once the chicken breasts are ready place on the burgers and top with the mango salsa.
