Ingredients (7)

800.00 g fish — white, fillets
lemon juice
salt and freshly ground black pepper — to taste
sunflower oil — or butter, for frying
65.00 ml pesto
parmesan cheese — freshly grated
parmesan cheese — shavings

Method:

Wipe fish with a damp cloth, drizzle with lemon juice and season.

Heat a little butter and oil in a frying pan and fry fish, uncovered, for 2 minutes.

Cover pan and cook until just done (fish is opaque and will flake easily), about 6 minutes.

Remove from pan and place on a lightly oiled baking sheet. Spread top of fish liberally with pesto and sprinkle with grated Parmesan cheese.

Grill fish under a preheated grill until pesto and cheese begin to bubble.

Serve immediately, decorated with shavings of Parmesan cheese.

Serve this deliciously juicy fish dish with boiled new potatoes topped with a garlicky tomato vinaigrette.
