Orange-crumbed fish

    fresh breadcrumbs
  • 45
    extra-virgin olive oil
  • 1
    orange - juice and grated zest
  • 60
    Italian parsley - chopped
  • 4
    x 150 g cob cutlets or fillets


Preheat the oven to 200 °C.

Mix together the breadcrumbs, olive oil, zest, juice and parsley.

Press the crumbs onto each piece of fish.

Place fish on a baking tray and bake for 15 minutes or until the fish is cooked and the crumbs are golden.

Serve with oven baked chips or a healthy salad.
