Mushroom pot pies

Ingredients (10)

6 leeks — baby, chopped
2 garlic — cloves, crushed
80 g butter
400 g mushrooms — mixed, sliced
50 g button mushrooms — white, sliced
30 ml fresh thyme
100 ml wine — dry white
125 ml cream — fresh
400 puff pastry — defrosted
1 eggs — beaten

Method:

Pre-heat the oven to 180ºC. Heat the butter in a frying pan and fry the baby leeks until soft and fragrant.

Add the garlic mushrooms and thyme and stir-fry for 3 minutes. Add the wine and simmer for 5 minutes.

Add the cream and remove from the heat. Place into an oven dish or individual oven dishes and let cool down slightly.

Place the pastry on top and decorate as desired. Brush with the egg.

Bake until golden brown, about 15 minutes.
