Minute steaks with garlicky chips

Ingredients (8)

15.00 ml fresh chillies — 573
3.00 beef — minute steaks
salt and freshly ground black pepper
Garlic potato chips:
3.00 potatoes — large, peeled
8.00 garlic — large cloves
2.00 fresh rosemary
sea salt and freshly ground black pepper
30.00 ml fresh chillies — 573

Method:

For the potatoes: Halve potatoes, then cut each half into 3-4 long fingers. Place in an oiled ovenproof dish.

Arrange garlic cloves around potatoes, sprinkle with rosemary, salt, pepper and oil.
Cover with foil and bake at 180 ºC for about 1 1/4 hours.

After 45 minutes, remove foil and continue cooking until potatoes turn golden brown.

For the steaks: Heat olive oil in a pan until piping hot. Add steaks, one at a time. Turn over after a few seconds and sprinkle with seasoning. Sear for a minute or two on each side.

Remove and serve immediately on a heated plate with garlic chip potatoes and a light salad.
