Ingredients (8)

30.00 ml sunflower oil
1.00 onion — chopped
15.00 ml curry powder — medium
500.00 g beef mince — lean
1.00 tinned tomatoes — chopped
5.00 ml sugar
500.00 g butternut — cubed
6.00 roti

Method:

Heat the oil in a large saucepan. Add the onion and fry over a medium heat for five minutes before adding the curry powder and stirring well.

Add the mince and cook, stirring until it is no longer pink. Add the tomatoes, sugar and butternut. Bring to the boil, then reduce the heat and simmer, covered, for about 20 minutes until the butternut is tender.

Serve rolled up in a roti, or on a bread roll, with a tossed salad.

Tip: Try lamb mince for a variation. If your family enjoys the taste, use ostrich mince as a healthy alternative to beef. Add fresh mint for extra flavour.
