Beef schnitzel rolls

    beef schnitzels
  • 2
    garlic, crushed
  • 45
    sun-dried tomato pesto
  • 100
    feta cheese, crumbled
  • 1
    large egg, beaten
  • flour, for dusting
  • 100
    dried breadcrumbs
  • oil, for frying

Top each beef schnitzel with some cheese, garlic and pesto. Roll up and secure with a toothpick. Dip each roll into the egg, then into the flour and then the breadcrumbs.

Heat a thin layer of oil in a large frying pan and cook rolls for 10 to 15 minutes, until golden brown and cooked through. Serve with a baked potato and salad.

Cut the beef schnitzels into thin strips and toss in sun-dried tomato, pesto and garlic. Fry until browned and serve with rice.
