Ingredients (12)

1.00 bread — French loaf
200.00 g baked beans in tomato sauce
125.00 ml oat bran
5.00 ml canola oil — or olive oil
1.00 onion — chopped
0.25 green pepper — chopped
1.00 garlic — cloves, finely chopped
2.00 tomatoes — diced
5.00 ml fresh herbs — chopped
5.00 ml mustard — powder
100.00 g bacon — fat removed
250.00 ml mozzarella cheese — low fat, grated

Method:

Preheat the oven to 180 °C.

Halve the French loaf lengthwise and remove the inside of both halves.

Discard 250 ml of the inside of the loaf and crumble the rest (you could freeze the remaining bread to use in stuffings or frikkadels).

Mix the crumbs with the baked beans and oat bran.

Heat the oil and lightly fry the onion, pepper and garlic. Add the tomatoes and cook until soft.

Mix the bean mixture with the tomato mixture and add the herbs and mustard.

Spoon the mixture into the bread-half hollows.

Scatter the bacon on top, followed by the cheese.

Bake for 15 minutes and then serve with a large mixed salad.
