Chicken pasta with sundried tomatoes

    penne pasta

    sundried tomatoes
  • 1
    garlic clove

    olive oil

    balsamic vinegar
  • 2 to 3 smoked chicken breasts, cut into strips
  • 200
    fresh sweet basil leaves, torn
  • 200
    pecorino cheese, freshly grated


Cook the pasta according to the package instructions until al dente. Place the sundried tomatoes and garlic in a large measuring jug and pour 250ml-boiling water into it. Allow to stand for 15 minutes. Add the olive oil and balsamic vinegar and purée with a hand blender. Season to taste with salt and pepper.

Heat the chicken in the sauce, then stir through the warm pasta. Sprinkle sweet basil and pecorino cheese over the top and serve immediately.
