Ingredients (15)

20.00 ml lemon juice — fresh
10.00 ml rocket
5.00 ml black pepper — freshly ground
5.00 ml lime — zest only
6.00 pineapple — fresh, sliced
6.00 emmental cheese — slices
1.00 red pepper — roasted
5.00 ml salt
burgers: chicken mince
60.00 ml fresh coriander — chopped
100.00 g breadcrumbs
6.00 bread — rolls, to serve
6.00 spring onions — finely chopped
35.00 ml fresh chillies — 573
1.00 green chillies — finely chopped
1.00 eggs — lightly whisked

Method:

Burgers: Using your hands, mix all the ingredients for the burgers except the olive oil in a large mixing bowl.
Divide the mixture into 6 uniform parts and shape each into a patty about 10 cm in diameter and 1,5 cm thick.
Put the patties on a baking sheet lined with wax paper and chill in the fridge for 30 minutes.
Heat half the oil over medium heat in a large nonstick pan and fry 3 of the patties for 4 minutes a side or until brown and done.
Repeat with the remaining oil and patties.

To serve: Put a chicken burger on one half of a roll and top with a slice of cheese, slice of pineapple and piece of pepper.
Pile rocket leaves on top and cover with the other half of the roll.
Repeat with the remaining rolls.
