Cheesy bean and sweetcorn nachos

Tasty nachos covered in melted cheese and slathered in spicy salsa.

Ingredients (8)

20 ml fresh chillies — 573
1 onion — chopped
1 fresh chillies — finely chopped
1 butter beans — tinned, drained
1 sweetcorn — tinned, drained
2 tomatoes — chopped
400 g nachos
200 g mozzarella cheese — grated

Method:

Heat the olive oil in a large frying pan and fry the onion until soft.

Add the chilli and fry for a further minute.

Stir in the beans and the sweetcorn and fry over medium heat for about 5 minutes.

Stir in the tomatoes and cook for a further two minutes.

Cover the base of a large baking tray with the nachos.

Top with the bean mixture and a layer of mozzarella.

Melt the cheese under a hot grill.

Serve with guacamole and salsa.
