Cauliflower mac ‘n cheese

Ingredients (11)

1 cup pasta — macaroni, cooked to al dente
1 cauliflower — florets, steamed
For the cheese sauce:
50 g butter
50 ml flour
2 cup milk
1 cup cheddar cheese — grated
1/2 cup parmesan cheese — grated
salt and freshly ground black pepper
nutmeg — ground
TOPPING:
cheese
fresh parsley

Method:

Preheat the oven to 200 degrees.

In a medium pot, make a roux with the butter and flour, then slowly add the milk, whisking all the while over high heat until thickened.

Stir in the cheese and season to taste.

Add the cooked macaroni and cauliflower, stir until well combined.

Spoon into a greased baking dish, sprinkle with cheese and parsley.

Bake for + – 20 minutes or until the cheese topping is golden and crispy.
