Black cherry and dark chocolate pancakes

  • 1
    batch pancake mix
  • 1
    tin black cherries
  • 2
    bars dark chocolate (the best you can afford)
  • Butter
  • 2
    brown sugar
  • 1
    star anise
  • 1
    dessert wine

For the pancakes:
Preheat oven to 160 °C.
In a pan, make 8 pancakes using a little butter each time and the pancakes are golden.
Put a few blocks of chocolate onto 1/4 of the pancake and fold in half and then half again.
Place on a baking tray.
Place in the oven for 10 minutes.
For the sauce:
Place the black cherries, dessert wine, sugar and star anise into a pot and bring to the boil.
Turn down and simmer for 15 mins.
To serve: place 2 pancakes on a plate and drizzle with the sauce.
