Beef and red pepper stir-fry

Ingredients (10)

5.00 ml olive oil — extra virgin
1 fresh ginger — peeled and chopped
2 garlic — cloves, crushed
4 spring onions — chopped
1 red pepper — deseeded and cut into thin strips
350 g beef — cut into strips
1 celery stalks — finely sliced
1 carrots — scrapped and julienned
15 ml soy sauce — dark or Worcestershire sauce
salt and freshly ground black pepper — to taste

Method:

Heat the oil in a large heavy-based frying pan until very hot.

Add the ginger, garlic and spring onions and stir-fry for two minutes.

Add the pepper and beef strips and stir-fry for another three minutes or until the meat is no longer pink on the outside.

Add the vegetables and soy sauce and cook for about another three minutes.

Season to taste with salt and pepper and serve immediately with brown rice.
