350 g pasta — penne
1 onion — chopped
400 g beef mince — lean
2 tinned tomatoes — Italain-flavoured
100 ml parmesan cheese — grated

Method:

Preheat oven to 220°C.

Bring a large pot of salted water to the boil. Add the pasta and cook until al dente. Do not overcook the pasta. Drain the water, leaving a little in the pot to prevent the pasta drying out.

While the pasta is cooking, heat the oil in a frying pan, add the onion and sauté  until soft. Add the mince and brown, then add the tomatoes. Lower the heat and simmer for 10 minutes. Add a pinch of sugar and season to taste with salt and black pepper.

Add the mince to the pasta and stir gently to combine. Pour into a greased ovenproof dish and sprinkle the cheese over the top. Bake in a preheated oven for 10 minutes or until the cheese has melted and the top is golden. Serve with shaved Parmesan and fresh parsley.
