Mushroom and bacon mini quiches

Ingredients (10)

250 ml milk
250 g bacon — bits, cooked
onion — chopped
500 ml cheddar cheese — grated
250 g mushrooms — chopped
50 g butter
5 ml Baking powder
seasoning
ml fresh parsley — or spring onions, finely chopped
eggs

Method:

Sauté the bacon, onions and mushrooms in the butter.

Beat together milk, eggs and seasoning. Add to bacon the mixture. Add remaining ingredients and mix well.

Pour into non-stick patty pans and bake at 180°C for about 15 – 20 minutes or until cooked through.

Serve with a side of roasted veggies and some fresh crusty bread.
