Almond tarts

These tarts are both delicious and simple to make.

Ingredients (6)

12 cream crackers
100 g almonds — flaked
3 eggs — white
250 ml sugar
1 tsp Baking powder
1 tsp almond essence

Method:

Toast the almonds in the oven at 160°C for 10 mins or dry fry them in a frying pan until they turn a slight golden colour.
Crush the cream crackers in a plastic bag with a rolling pin.
Beat the egg whites until very stiff.
Fold in the remaining ingredients, keeping back a small amount of nuts to sprinkle over the pies before they go into the oven.
Place in a greased pie dish, or individual ones.
Bake in the oven at 160°C for 30 mins if you make one pie and slightly less (about 20 minutes) if you do individual ones.
