Yummy Tiramisu

    strong black coffee

    brandy

    brandy essence

    finger biscuits

    large eggs, separated
  • 30
    ml
    caster sugar
  • 10
    ml
    brandy (optional)

    cream cheese
  • 15
    ml
    cocoa powder for decorating
 

Method

2-4 hrs
 

1 Mix the coffee and brandy or brandy essence in a cup and pour into a flat dish. Dip both sides of half the packet of biscuits into this mixture and place in a shallow round, square or rectangular dish.

2 Beat the egg yolks and caster sugar in a medium-size mixing bowl with a hand whisk or electric beater until thick and pale yellow. Add the 10 ml brandy (if using) and the cream cheese and mix until smooth.

Whisk the egg whites until stiff Tiramisu in a separate bowl and fold into the egg and cream cheese mixture. Pour half the mixture over the coffee and brandy biscuits.

3 Dip the other half of the biscuits in the coffee and brandy mixture and place on top of the cream cheese mixture. Pour the rest of the cheese mixture on top. Chill in the fridge for 2-4 hours or until set.

Sprinkle over the cocoa powder just before serving. Cut into squares or slices and serve immediately.
