    milk

    sago pearls
  • 310
    ml
    sugar
  • pinch
    of salt
  • 4 eggs
  • 5
    ml
    vanilla essence
 

Method

Preheat oven to 150 °C and grease ramekins.

1 Put the milk, sago, 250 ml (1 cup) sugar and salt over a medium heat. Cook stirring constantly for 30 minutes or until the sago is completely transparent. Set aside for 10 minutes.

2 Separate the eggs and lightly beat the egg yolks and vanilla into the sago mixture. Transfer the mixture into your ovenproof dish.

3 Beat the egg whites and the rest of the sugar until stiff peaks form. Use to top the sago pudding.

4 Bake for 20 minutes or until the meringue is a light golden brown color and serve warm.

TIP

Remember not to overbeat the egg whites or they’ll collapse. Beat until stiff peaks form.
