Raspberry yoghurt mousse

Ingredients (7)

6 g Sheridans gelatine — powdered
30 ml water — hot
100 g raspberries — frozen
150 g Double cream plain yoghurt
15 ml honey

Method:

1. Put the gelatin powder in a small bowl and add the hot water. Stir until the gelatin has dissolved completely.

2. Whizz the raspberries in a blender or food processor, add the yoghurt and honey and blend until smooth.

3 Add the gelatin  and blend until well combined with the yoghurt and honey. Pour the mousse mixture into small glass ramekins, cover with lids and chill in the fridge for at least 3-4 hours or overnight until set.

Serve with the whipped cream and fresh raspberries.
