Quick and easy tiramisu

    sponge fingers
  • 250
    ml
    strong hot coffee
  • 125
    ml
    sherry juice and zest of 1 orange
  • 500
    g
    mascarpone or cream cheese
  • 60
    ml
    caster sugar
  • 200
    g
    dark chocolate, grated
 

Method

5 minutes
 

For a lower-fat version, make the tiramisu in espresso cups, leave out the sherry and replace the cream cheese with smooth cottage cheese. 

1. arrange the sponge fingers in a large dish. Mix the coffee, sherry and orange juice and pour the mixture over the sponge fingers.

2. using a wire whisk, beat together the orange zest, mascarpone or cream cheese and sugar.

3. Spread half the mascarpone mixture over the biscuits and sprinkle half the chocolate on top. Spread the remaining mascarpone mixture on top and sprinkle with the remaining chocolate. 

4. Chill until needed.
