Ingredients (7)

1 mixed berries — container, frozen
15 ml brandy
30 ml sugar
1 readymade custard — container
250 g mascarpone cheese — or cream cheese
6-8 meringues — roughly broken
fresh berries

Method:

This sumptuous, chocolatey dessert was named for the place it was invented, the well-known elite British school called Eton College.

1. Bring the berries, brandy and sugar to the boil in a small saucepan. Simmer until the berries are soft and syrupy.

2. Mix the custard and mascarpone until smooth.

3. Layer the custard mixture, crushed meringues and berry mixture in small glasses, ending with meringue.

4. Chill until needed.

5. Garnish with fresh berries.
