    g
    strawberries
  • 10
    ml
    sugar
  • 3
    egg yolks
  • 45
    ml
    icing sugar
  • 15
    ml
    Amarula
  • 4
    egg whites
  • 250
    g
    mascarpone cheese
  • 200
    g
    ladyfinger biscuits
  • 500
    ml
    strawberry juice
  • 50
    g
    cranberries, chopped
 

Method

Chilling takes 4 hours
 

Prepare a ring cake pan.

1 Cut up the strawberries, sprinkle sugar over, mix and set aside.

2 In a large bowl, beat the yolks, icing sugar and Amarula until pale yellow and dense.

3 Add the mascarpone and mix well. In a separate bowl, beat the egg whites to stiff peaks and slowly fold into the mascarpone mixture.

4 Cut some of the biscuits to the desired height and put them around the cake pan vertically, cut side down. Start the base of the tiramisu by soaking the remaining biscuits in the strawberry juice for a couple of seconds (don’t soak them for too long because they will become soggy). Use them to cover the entire base of the cake pan.

5 Put the chopped strawberries over the biscuits, followed by half the mascarpone mixture and the cranberries. Once again, layer with strawberries, cranberries and finish off with the mascarpone mixture. Refrigerate for at least 4 hours to set. Top with strawberries and icing sugar to serve.
