Buttermilk pudding

Ingredients

  • 30
    ml
    butter
  • 180
    ml
    sugar
  • 5
    ml
    vanilla essence
  • 4
    eggs
  • pinch of salt
  • 125
    ml
    self-raising flour, sifted
  • 750
    ml
    milk, mixed with
  • 75
    ml
    lemon juice or grape vinegar
 

Method

45 minutes
 

If you don’t have buttermilk make soured milk by adding lemon juice or vinegar to fresh milk.

1. Preheat the oven to 180 °C. 

2. Cream together the butter and sugar. 

3. Add the vanilla essence, eggs and salt and beat well. 

4. Add the flour, alternating with the soured milk, to the egg mixture. Mix well. 

5. Spoon the batter into an  ovenproof dish and bake for 45 minutes or until set.
