Builder’s cake

Ingredients (8)

200 g butter — softened
375 ml castor sugar
eggs
500 ml flour — self-raising
400 g
300 g sour candy strips
145 g chocolate cookies
colourful sweets

Method:

Preheat the oven to 180 °C.
Line two 18 cm cake pans.

1 Cream the butter and
sugar together until pale.
Beat in the eggs. Sift over
the flour and fold in using
a large metal spoon.

2 The mixture should have
a dropping consistency. If
it doesn’t, add a little milk.
Divide the mixture between
the cake pans and gently
spread out with a spatula.
Bake for 20 minutes or until
a skewer comes out clean.
Allow to stand for 5 minutes
before turning on to a wire
rack to cool.

3 Sandwich your two cake
layers together using the
vanilla icing and cover the
sides and top of the cake.

4 Stick sour candy strips
around the outside, packing
them close to each other.
Trim with scissors.

5 At the front of the cake,
trim the candy strips and
cake so it looks like some
of it has been dug away.

6 Crush the cookies to look
like rubble. Sprinkle the
rubble in the middle of the
cake. Decorate with sweets
and toy trucks.
