Chewy chocolate crinkle cookies

Ingredients (11)

375 ml flour
125 ml cocoa powder
10 ml Baking powder
salt — just a pinch
90 g butter — softened
250 ml brown sugar
eggs
5 ml vanilla — essence
300 g chocolate — melted and cooled
125 ml castor sugar
250 ml icing sugar

Method:

1 Preheat the oven to 180 °C.

2 Grease and line a baking sheet with baking paper.

3 In a medium-sized bowl,mix together the flour, cocoa powder, baking powder and salt.

4 In another bowl cream the butter and brown sugar until light and fluffy.

5 Add the eggs and vanilla essence to the butter mixture and beat until well-combined.

6 Beat in the melted chocolate.Gradually fold in the flour mixture until just combined.

7 Chill the dough in the fridge for at least 2 hours, until firm.

8  Remove from the fridge. Forma tablespoon of dough into a ball and place on a plate.Repeat with remaining dough.

9 Place the caster sugar and icing sugar in separate bowls.Roll each ball in caster sugar,then icing sugar, making sure they’re well coated. Place the balls on the baking sheet,making sure they’re spaced apart.

10 Bake for 10 minutes, until the biscuits begin to spread and the tops split.

11 Remove from the oven. Let the biscuits cool for a few minutes then transfer them to a wire rack to cool completely.
