Ingredients (11)

6 chicken breast fillets
15 ml oil
3 bacon rashers — chopped
2-3 carrots — finely grated
½ onion — finely chopped
½ each red, yellow and green peppers, finely chopped
80 ml breadcrumbs — dry
45 ml fresh parsley — chopped
50 g feta cheese — crumbled
mixed herbs, salt and pepper
mashed potato and roast vegetables to serve

Method:

1 Preheat the oven to 180 °C and lightly grease a baking tray.

2 Put each
chicken breast flat on a cutting board and cut into the meat to make a pocket.
Place the chicken on the baking tray.

Stuffing
Heat a little oil and fry
the bacon for 3 minutes or until slightly crisp, remove from the pan and mix with
the other ingredients in a bowl. Scoop spoonfuls into the pockets in the
chicken. Brush the stuffed chicken with oil from the pan.

4 Sprinkle on
the mixed herbs and season lightly with salt and pepper. Bake for 10 to 15 minutes
until cooked.

5 Serve with mash and roast vegetables of
your choice.
