Stuffed chicken breasts on mash with roasted veggies

    chicken fillets
  • 15
    ml
    oil
  • 3
    rashers of bacon, chopped
  • 2-3
    carrots, finely grated
  • ½
    onion, finely chopped
  • ½
    each red, yellow and green peppers, finely chopped
  • 80
    ml
    dry breadcrumbs
  • 45
    ml
    fresh parsley, chopped
  • 50

    feta cheese, crumbled
  • mixed herbs, salt and pepper
  • mashed potato and roast vegetables to serve
 

Method

10-15 mins
 

1 Preheat the oven to 180 °C and lightly grease a baking tray.

2 Put each chicken breast flat on a cutting board and cut into the meat to make a pocket. Place the chicken on the baking tray.

3 Stuffing Heat a little oil and fry the bacon for 3 minutes or until slightly crisp, remove from the pan and mix with the other ingredients in a bowl. Scoop spoonfuls into the pockets in the chicken. Brush the stuffed chicken with oil from the pan.

4 Sprinkle on the mixed herbs and season lightly with salt and pepper. Bake for 10 to 15 minutes until cooked.

5 Serve with mash and roast vegetables of your choice.
