Ingredients

  • juice of 3 lemons
  • 10
    ml
    paprika and cumin mix
  • 4 spring onions, chopped
  • 1 clove garlic, crushed
  • 4 chicken breasts, cubed olive oil for frying
  • ½ red pepper
  • ½ yellow pepper
  • 2 green chillies, chopped
  • 1 apple, cubed
  • 4 tomatoes, chopped
  • juice of ½ lemon
  • small bunch coriander leaves, chopped
  • chilli sauce, to taste
  • 2 very ripe avocados
  • juice of ½ lemon
  • 2,5
    ml
    black pepper
  • 6 tortillas, toasted
  • 125
    ml
    Cheddar cheese, grated
 

Method

1 MARINADE

Mix ingredients in a bowl and marinate the chicken in the fridge for at least 1 hour.

2 SALSA

Mix all the ingredients together.

3 GUACAMOLE

Spoon avocado into a bowl and mash. Stir in the lemon juice and black pepper.

4 Heat oil in a pan over high heat and fry the chicken for 8 minutes.

5 Spoon chicken, salsa, guacamole and cheese in a tortilla and enjoy!
