Masala chicken drumsticks with carrot salad

  • salt

    cumin seeds (toasted)

    full-cream plain yoghurt
  • 4
    garlic cloves, crushed
  • 30

    roasted masala
  • 8
    carrots, peeled and coarsely grated
  • 20

    coriander, roughly chopped

    olive oil
  • 15
    ml
    apple cider vinegar
  • pinch of salt

    raisins
  • 1
    lemon coriander, to garnish
 

Method

Preheat the oven to 210°C. Put a wire rack on a baking sheet and grease with non-stick spray.

CHICKEN

Put the chicken pieces in a dish and season with salt. Mix the rest of the ingredients well and rub over the chicken pieces.

Put the drumsticks in a single layer on the prepared wire rack and roast for 25 minutes or until done. 

SALAD

In the meantime, mix all the salad ingredients and serve with the drumsticks. 4 TO FINISH Garnish with lemon quarters and coriander.
