Honey and mustard roasted chicken

    chicken pieces
  • salt and freshly ground pepper
  • 30

    olive oil
  • 15
    ml
    butter
  • 2
    onions, finely chopped
  • 4
    garlic cloves, finely chopped
  • 250
    g
    brown mushrooms, finely chopped
  • 5
    ml
    Dijon mustard
  • 15
    ml
    wholegrain mustard
  • 30
    ml
    honey
  • 250
    ml
    cream
  • 500
    g
    green beans, topped
 

Method

1½ hours
 

Preheat the oven to 190 °C.

Grease an ovenproof dish with nonstick spray.

 

1 Season the chicken with salt and pepper.

2 Heat half the oil in a large pan and brown the chicken. Transfer to the prepared dish.

3 Heat the rest of the oil and the butter in the same pan and brown the onions and garlic. Add the mushrooms and stirfry until done.

4 Reduce the heat and stir in the two kinds of mustard and honey. Add the cream and simmer for a minute.

5 Spoon the sauce over the chicken, cover with foil and bake for 40 minutes. Remove the foil. Arrange the green beans among the chicken pieces and roast for another 15-20 minutes or until the chicken is golden brown and done.
