Creamy butter chicken

    butter
  • 2
    large onions, chopped
  • 750
    g
    chicken breast fillets, cubed
  • 2
    ml
    ground cumin
  • 2
    ml
    ground coriander
  • 2
    ml
    chilli powder
  • 2
    ml
    turmeric
  • 5
    ml
    garlic flakes
  • 5
    ml
    sugar
  • 1
    can tomato paste
  • 250
    ml
    cream rice to serve handful of fresh coriander to serve
 

Method

30 minutes
 

Estelle Potgieter of east London often makes this creamy butter chicken dish.

1. Heat the butter in a saucepan and fry the onions until translucent. Add the chicken and stir-fry for a few minutes.

2. Add the spices and sugar and stir-fry for a few minutes.

3. Add the tomato paste and cream. Simmer slowly over medium heat for 15 minutes.

4. Cool and freeze in portions. Freeze the rice separately. Serve with fresh coriander.
