Cheesy baked chicken

    chicken pieces (thighs and legs)
  • salt and pepper

    ml
    butter
  • 30
    ml
    cake flour
  • 500
    ml
    milk
  • 15
    ml
    mixed herbs
  • 125
    ml
    grated Cheddar cheese
  • 125
    ml
    grated mozzarella cheese
  • 125
    ml
    breadcrumbs
  • 5
    spring onions, chopped

Budget-friendly and so easy to make!

Preheat the oven to 180 °C and grease an ovenproof dish.

1. Arrange the chicken in the prepared dish and season with salt and pepper.

2. In a small saucepan, heat the butter until just melted, add the flour and stir to make a paste. Pour in the milk while slowly whisking until the sauce thickens.

3. Remove the sauce from the heat and add the herbs and 60 ml (¼ c) of each cheese.

4. Pour the sauce over the chicken, sprinkle the breadcrumbs and remaining cheese on top. Bake in the oven for 35-45 minutes oruntil the chicken is cooked.

5. Garnish with the chopped spring onions and serve with roast vegetables.
