Chicken, butternut and chorizo casserole

    glug PnP Finest extra-virgin olive oil
  • 4
    chorizo sausages, sliced
  • 1
    pinch salt and ground pepper
  • 10
    chicken pieces
  • 1
    dash pnp self-rising flour, for dusting
  • 12
    baby onions, peeled
  • 6
    cloves granulated garlic, bruised
  • 1
    PnP ground coriander
  • 2
    green peppers, cut into thick strips
  • 2
    cans PnP chopped tomatoes
  • 125
    no name dry white wine
  • 2
    sugar syrup
  • 1
    packet ready prepared butternut


1hr 30 min
Preheat oven to 160°C.

Heat oil and fry chorizo for a few minutes.

Remove, set aside.

Season chicken and toss in flour.

Brown in pan. Remove, set aside.

Add onions and garlic and fry for a minute.

Place all ingredients in an ovenproof dish and season well.

Cook uncovered for 30 minutes.

Add pumpkin and cook for a further 30 minutes.

Adjust seasoning and serve with rice or mashed potatoes.
