Grilled pineapple, feta and pancetta salad

Ingredients (10)

1 pineapple — cubed
100 g pancetta — sliced
150 g feta cheese
100 g rocket
50 g watercress
50 g spring onions — sliced
1/2 cup pumpkin seeds — roasted
fresh chillies
1 lemon
salt and freshly ground black pepper

Method:

Season your pineapple pieces with salt, pepper and olive oil, and grill on a hot grill pan for 1 minute on each side till grill lines appear.

In a large bowl toss your rocket, watercress, and spring onion with olive oil, lemon juice and salt and pepper.

Place you leaves on your serving platter and top with the pineapple, feta, pancetta and pumpkin seeds.

Top Tip:
Depending on the season you can replace the pineapple with nectarines, peaches and pears.
