Granola bars

Ingredients

    g
    mixed nuts
  • 500
    ml
    oats
  • 30
    ml
    chia seeds
  • 125
    ml
    desiccated coconut
  • 80
    ml
    coconut oil
  • 60
    ml
    honey
  • 2
    ml
    ground cinnamon
  • TOPPING
  • 100
    g
    dark chocolate almond flakes, coconut flakes and sea salt flakes
 

Method

15 minutes
 

Preheat the oven to 180 °C. Line a greased baking tin with baking paper and grease more with non-stick spray.

1. Mix the nuts and oats and divide into two equal portions.

2. Process one portion in a food processor until as fine as flour.

3. Pulse the rest of the nuts and oats   until slightly finer.

4. Mix the two portions and add the chia seeds and coconut.

5. Heat the coconut oil, honey and cinnamon together until runny. Pour over the oats and nut mixture and mix well.

6. Spoon into the prepared tin and press down firmly. Bake for 15 minutes or until firm. Allow to cool.

7. Topping Melt the chocolate and spread over the granola. Sprinkle almond, coconut and sea salt flakes over and cool until firm. Cut into bars.
