Cinnamon porridge

    milk
  • 250
    ml
    cream
  • 1 cinnamon stick
  • 80
    ml
    maize meal
  • 80
    ml
    sugar
  • 4 egg yolks
  • cinnamon sugar, to serve
 

Method

1 Combine the 250 ml (1 cup) milk and cream in a small saucepan. Put over medium heat with the cinnamon. Cook, stirring constantly, for about 5 minutes or until hot. Remove from heat.

2 Whisk the maize meal, sugar and the rest of the milk in a bowl until well-combined. Remove cinnamon stick. Pour maize mixture into the hot milk mixture, whisking constantly.

3 Put the mixture over low heat. Cook, stirring constantly, for 15 minutes or until the porridge thickens and coats the back of a metal spoon.

4 Remove from heat and stir in the egg yolks. Serve sprinkled with cinnamon sugar.
