Breakfast burger with peas

Ingredients

    ml
    frozen peas
  • 30
    ml
    butter
  • 15
    ml
    lemon juice
  • 30
    ml
    chopped fresh mint
  • 2 rounds feta cheese
  • salt and freshly ground pepper
  • 15

    olive oil
  • 30
    ml
    mayonnaise
  • 15
    ml
    butter
  • 4
    eggs
  • 4
    4 ciabatta rolls, halved horizontally and buttered
  • 4
    thin deboned Kassler chops
 

Method

1 Peas

Put the peas, butter and lemon juice in a microwave-proof bowl. Microwave for 2 minutes on high and stir well.

2 Add the mint, mix and then crumble the feta cheese over. Mix well and season with salt and pepper. Set aside.

3 Burgers

Heat the oil in a pan and fry the Kassler chops until golden brown and slightly crispy on the edges.

Remove from the pan and set aside.

4 Put the ciabatta rolls, cut side down, in a pan and toast until crispy.

Remove and spread mayonnaise on each half.

5 Heat the butter in the same pan and fry the eggs to your liking.

6 To serve, spoon a generous helping of peas on the bottom halves of the ciabatta rolls, followed by a chop and an egg.

Season with salt and freshly ground pepper, top with the remaining half rolls and serve immediately.
