Ingredients (14)

FOR THE RELISH
4 tomatoes — chopped
1 red onion — chopped
2 garlic cloves
10 ml sugar
10 ml Worcestershire sauce
1 chilli — deseeded
salt and freshly ground black pepper
FOR THE PATTIES:
600 g boerewors
250 ml cheddar cheese — grated
½ red onion — finely chopped
30 ml fresh coriander — finely chopped
TO SERVE
4 sesame seeds
60 ml sour cream
80 g butter lettuce

Method:

For the relish, combine all of the ingredients in a food processor and blend until fine.

Transfer the mixture to a small saucepan and cook over medium heat, 15 mins.

Season it to taste.

For the patties, remove the boerewors meat from the sausage casing.

Add the meat to a mixing bowl and combine with the cheese, red onion, coriander and chutney.

Form the mixture into 4 large patties.

Heat the oil in a cast iron pan over the braai or over medium heat on a stovetop.

Fry the patties for 2-3 mins on each side until cooked through and lightly charred.

To serve, slice open each sesame bun and spread the base of each burger with some sour cream and add the lettuce leaves.

Add a patty to each and top off with the relish.

Serve with fries or wedges on the side.

TIP: For a crispy burger bun, simply fry the cut-sides of each bun half in a splash of oil over medium heat until crisp or toast it on the braai over medium coals.
