Roasted tomato and feta salad

Cheeky roasted cherry tomatoes are gorgeous with fresh basil.

Ingredients (8)

500 g baby tomatoes — halved
½ tsp salt
½ tsp black pepper — freshly ground
2 tsp sugar
1 balsamic vinegar
200 g feta cheese
A handful of fresh basil
salt and freshly ground black pepper — to taste

Method:

Mix the tomatoes, olive oil, salt, pepper and sugar together and roast in a pre-heated oven at 180°C for one hour. Remove from oven, sprinkle with balsamic vinegar, mix well and allow to cool down.

Adjust the seasoning and allow it to cool to room temperature.

Crumble the feta and add to the tomatoes and the juices. Serve with torn basil leaves.
