The easiest rocket pesto you will ever make

Ingredients

  • 500
    ml
    rocket
  • 2
    garlic cloves
  • 60
    ml
    walnuts
  • 180
    ml
    Parmesan cheese
  • 160-180
    ml
    olive oil
  • 5
    ml
    fresh lemon juice
 

Method

 
Place all the ingredients (apart from the olive oil and lemon juice) in a food processor and purée to form a fine paste. Slowly add the olive oil in a thin stream while the machine is running. Add the lemon juice once all the oil has been added. Place the pesto in a container and store it in the refrigerator until required.
