Strawberry and lime granita with fennel sprinkle

Ingredients (7)

GRANITA:
125 ml sugar
300 ml water
500 g strawberries — chopped
50 ml lemon juice — or fresh lime juice
SPICE MIX:
30 ml fennel — seeds
5 ml sea salt
30 ml sugar — coarse crystals

Method:

Combine sugar with water in a saucepan. Heat until the sugar has dissolved, then cool.

Blend chopped strawberries in a food processor until smooth. Stir in lime or lemon juice and the prepared sugar syrup. Transfer to a shallow metal dish and freeze.

Remove from the freezer and stir with a fork every hour until the granita is frozen. When ready to serve, scrape the granita with a fork to lighten the texture.

Spoon into small glasses and serve sprinkled with the fennel spice mix.

Spice Mix:
Dry-fry fennel seeds until fragrant. Cool, then crush lightly with a pestle and mortar. Combine with coarse salt and coarse sugar crystals.
