Spicy chocolate chip cookies

    butter, softened
  • 125
    ml
    brown sugar
  • 200
    ml
    golden syrup
  • 750
    ml
    flour, sifted
  • 5
    ml
    bicarbonate of soda, sifted
  • 5
    ml
    ground ginger
  • 2,5
    ml
    ground all-spice
  • 100
    g
    chocolate chips
 

Method

Preheat the oven to 180 °C.

1 Put the butter and sugar in a bowl and beat for 5 minutes,scraping down the sides of the bowl, until pale and creamy.

2 Add the golden syrup, flour,bicarbonate of soda, ginger and all-spice and beat until the mixture just comes together to form a smooth dough.

3 Fold in the chocolate chips.

4 Roll the mixture into balls,about 15 ml (1 tbsp) each, and put on a large lightly-greased baking sheet lined with baking paper.

5 Flatten slightly and bake for 8 minutes or until golden.

6 Allow to cool slightly before transferring to wire racks to cool completely
