Saucy ginger pudding

    treacle sugar

    melted butter
  • 1 egg, whisked
  • 5

    vanilla essence
  • 125
    g
    dates, chopped
  • 250
    ml
    self-raising flou
  • 1
    ml
    salt
  • 10
    ml
    ground ginger
  • 2,5
    ml
    mixed spice
  • 5
    ml
    ground cinnamon
  • 125
    ml
    treacle sugar
  • 250
    ml
    water
  • 15ml
    ml
    butter
  • vanilla ice cream or custard
 

Method

45-50 min
 

Preheat the oven to 170°C. Grease a 20cm ovenproof dish well with butter.

1 In a large bowl, beat the sugar and butter together until creamy. Add the egg and vanilla essence and beat until well combined.

2 Fold in the dates.

3 Sift the flour, salt, ginger, mixed spice and cinnamon over the butter mixture and beat until just combined.

4 Pour the batter into the prepared dish and gently smooth the surface.

5 SAUCE

Heat all the ingredients in a saucepan and stir until melted. Pour the sauce over the pudding batter and bake for 45-50 minutes or until the pudding is cooked through – if it browns too quickly, cover with foil and continue baking
