  • FRUIT MIX

    dried apricots, roughly chopped

    dates, roughly chopped
  • 30

    brandy
  • 250
    ml
    hot rooibos tea
  • POLENTA
  • 50
    ml
    milk
  • 500
    ml
    water
  • 250
    ml
    polenta
  • 80
    ml
    caster sugar
  • 60
    ml
    cream
  • 2
    ml
    ground cinnamon pinch of nutmeg
  • TO SERVE
  • 60
    ml
    cream
  • 100
    g
    pistachio nuts, chopped
 

Method

20-25 minutes
 

1. Fruit mix Combine the ingredients and microwave for 5 minutes. Set aside.

2. Polenta Mix the milk and water in a large microwave proof glass bowl and microwave for 5 minutes.

3. add the polenta and whisk to combine well. Microwave for 5 minutes and whisk again. Microwave for another 5 minutes. Whisk and mix in the remaining ingredients. Microwave for 5 minutes.

4. To serve Spoon into bowls and top each serving with some of the fruit mix. Pour over the cream and sprinkle with the pistachio nuts. Serve immediately.
