    bran flakes
  • 250
    ml
    buttermilk
  • 60
    ml
    oil
  • 1 egg
  • 180
    ml
    brown sugar
  • 2,5
    ml
    vanilla essence
  • 250
    ml
    flour
  • 5
    ml
    baking powder
  • 5
    ml
    bicarbonate of soda
  • pinch of salt
  • 80
    ml
    raisins
  • 3 apples, chopped
 

Method

Preheat the oven to 180 °C. Line a muffin pan with paper cases.

1 Mix together the bran flakes and buttermilk and set aside for 5 minutes.

2 Combine oil, egg, sugar and vanilla, then add to the buttermilk mixture.

3 Sift together the flour, baking powder, bicarbonate of soda and salt.

4 Add to the buttermilk mixture and stir until just blended.

5 Add raisins and apples, then spoon into prepared muffin tins. Bake for 15 minutes and serve.
