Custard shortbread cookies

Ingredients

    g
    butter
  • 60
    ml
    caster sugar
  • 60
    ml
    icing sugar
  • 2
    egg yolks
  • 10
    ml
    vanilla essence
  • 500
    ml
    flour
  • 250
    ml
    icing sugar, sifted
  • 30
    ml
    custard powder
 

Method

8 MIN
 

Preheat oven to 160 °C.

1 Beat the butter, sugars, egg yolks and vanilla until creamy, then mix in the flour.

2 Roll out thinly on a floured surface, then use a cookie cutter to cut out the pastry.

3 Cut out the centres of the pastry with a smaller cutter.

4 Transfer to greased baking sheets and bake for 8 minutes or until golden.

 CUSTARD ICING

1 Beat the butter, icing sugar and custard powder.

2 Pipe or spread a good dollop of icing onto a biscuit, then sandwich another biscuit on top of it.

3 Repeat until all the biscuits are used.
