    smooth apricot jam

    eggs, lightly beaten

    desiccated coconut
 

Method

Preheat the oven to 180 °C and line an 18 x 18-cm square or small rectangular ovenproof dish with baking paper.

In a mixing bowl, beat butter and caster sugar until light and fluffy. Mix in egg and combine well. 

Sift the flours into the butter mixture and mix well. Spoon into the prepared dish and press down evenly. Bake for about 15 minutes or until light gold.

TOPPING

Combine the ingredients and mix well. Spread the topping over the crust, return the dish to the oven and bake for 20 minutes or until the coconut is golden. Leave to cool completely before cutting into squares.
