Pulled Lamb sandwich

Ingredients (24)

Pulled lamb:
1 kg leg of lamb
40 g garlic — cloves
60 ml lemon juice
30 g paprika
250 ml fresh chillies — 573
2.5 g mixed herbs
50 g onion
500 ml wine — red
15 ml soy sauce
20 g white sugar
10 g salt
Lagana:
500 g flour — bread
270 ml water
YEAST
30 ml sesame oil
30 g white sugar
15 g salt
30 g sesame seeds
Tatziki:
150 g cucumber
30 ml fresh chillies — 573
30 ml lemon juice
5 g fresh chillies
125 g yoghurt — plain
SALSA:
50 g tomatoes
40 g onion

Method:

Preheat oven to 140 degrees Celsius.

Chop garlic and mixed herbs.

Slice onions.

Mix all ingredients except lamb to create a marinade. Marinade lamb for 15 minutes.

Place marinated lamb and marinade in a deep dish suitable for oven use.

Cover dish with tin foil. Place dish in oven and cook for 3 – 4 hours.

Add regular intervals turn meat in dish and baste with marinade.

Once cooked remove from oven and leave to rest for 5-10 min.

Use a fork to pull the lamb.

Serve on lagana bread.

Lagana bread recipe

Pre heat oven to 180 degrees celcuis.

Mix water, yeast, sesame oil, sugar and salt.

Sift flour.

Add water mixture to flour in stages little bit at a time.

Mix and knead dough till soft and not crumbly.

Prove till double in size.

Place in greased baking tray in selected sizes.

Garnish with sesame seeds.

Bake in oven for 25 – 30 min.

Tatziki recipe

Peel, deseed and dice cucumber.

Finely chop chilli. Mix all ingredients. Blend all ingredients.

Salsa

Dice onion and tomato.

Crumb Parmesan cheese.

Mix all ingredients together.

Plate all above ingredients according to photo.
