This bread baker started his own sourdough library and we're impressed

Belgian bread aficionado, Karl de Smedt has collected more than 100 different samples of sourdough from 20 countries.

Karl de Smedt keeps scouring the globe for more sourdough starters to add to his huge collection. A sourdough starter (or 'mother') is basically a mixture of flour, water and yeast that is used to make the bread dough. The process of making sourdough involves fermentation of yeast cells that occur naturally in the air.
